    This recipe is really easy and super good. We’ve made it in our family for years and my sister was invited to showcase this recipe on a cooking show. Just make sure you refrigerator overnight!

    Eclair Cake

    Yields: 14 servings

    “This is a very quick and simple no bake dessert cake. It uses graham crackers and a pudding mixture. It tastes just like an eclair, but there is enough for a crowd!! It is a great recipe for children who are learning to cook, there is no baking involved or any power kitchen tools. Just a bowl and a spoon!”

    INGREDIENTS:
    2 (3.5 ounce) packages instant vanilla pudding mix
    1 (8 ounce) container frozen whipped topping, thawed
    3 cups milk 1 (16 ounce) package graham cracker squares
    1 (16 ounce) package prepared chocolate frosting

    DIRECTIONS:
    1. In a medium bowl, thoroughly blend the pudding mix, whipped topping, and milk.
    2. Arrange a single layer of graham cracker squares in the bottom of a 13×9 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.
    3. Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.

    Homemade Simple Boston Creme Pie:
    golden cake mix
    vanilla pudding cups
    chocolate icing

    make the cake as directed and bake in two 8 in. pans. cool. put two pudding cups in between before placing a cake on top of the other. microwave the icing so it’s slightly liquidey and pour it over the cake. voila! it tastes JUST LIKE a Boston Creme Pie and is my ABSOLUTE FAVORITE! hope it works well!

    more than you got the last time? Ok, I’ll find another one for you:) Remember, you don’t want anything that’s in a pan that you’ll have to bring home… These will look nice in a box that’s lined with tissue paper:

    STREUSEL STRUDEL
    1/2 lb. butter (softened)
    1 c. sour cream
    2 c. flour
    1 c. chopped nuts
    1 c. jam (apricot or peach)
    1 c. golden raisins
    Make a soft dough of butter, sour cream & flour. Wrap in plastic and chill well. Combine nuts,jam & raisins. Divide dough into 4 equal parts. Roll each part into a 5×10″ rectangle. Fill each rectangle with 1/4 of the fruit mixture. Roll lengthwise in jellyroll fashion. Bake on cookie sheet 40 min at 350. Cool and dust with powdered sugar. Can be cut into 2″ slices…..

    Heavenly Chocolate Mousse-

    Ingredients:

    * 8 (1 ounce) squares semisweet chocolate, coarsely chopped
    * 1/2 cup water, divided
    * 2 tablespoons butter (no substitutes)
    * 3 egg yolks
    * 2 tablespoons sugar
    * 1 1/4 cups whipping cream, whipped

    Directions:

    1. In a microwave or double boiler, heat chocolate, 1/4 cup water and butter until the chocolate and butter are melted. Cool for 10 minutes. In a small heavy saucepan, whisk egg yolks, sugar and remaining water. Cook and stir over low heat until mixture reaches 160 degrees F, about 1-2 minutes. Remove from the heat; whisk in chocolate mixture. Set saucepan in ice and stir until cooled, about 5-10 minutes. Fold in whipped cream. Spoon into dessert dishes. Refrigerate for 4 hours or overnight.

    One Bowl Brownies-

    Ingredients:

    * 4 (1 ounce) squares unsweetened chocolate
    * 3/4 cup butter
    * 2 cups white sugar
    * 3 eggs
    * 1 teaspoon vanilla extract
    * 1 cup all-purpose flour
    * 1 cup chopped walnuts

    Directions:

    1. Preheat oven to 350 degrees F (180 degrees C).

    2. Microwave chocolate and butter or margarine in large bowl at HIGH for 2 minutes or until butter or margarine is melted.

    3. Stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and nuts.

    4. Spread in greased 13 x 9 inch pan. Bake for 35 minutes (do not over-bake).

    Canned mixed fruit (drained), shredded/sweetened coconut, and sour cream… I hope you like it, I love it and it’s real easy no cooking just mixing!!! :)

    this is quick and easy and very yummy
    strawberry cake

    you bake a strawberry cake according to directions on box
    while it is cooling you take a 16 oz box of frozen strawberries, and thaw them in the microwave, puree them in the blender or food processer
    after the cake has cooled, take a wooden spoon and using the handle poke holes in the cake
    pour the pureed strawberries over the cake
    then take a 12 oz tub of thawed cool whip and mix it with 1 box of vanilla instant pudding that you have added one cup of milk to, and whisk these two item together, and put on cake, refridgerate for at least 4 hours. keep cold. and refridgerate leftovers
    it is very good

    Death by Chocolate
    1 box chocolate cake mix plus ingredients according to box
    4 sm boxes of Instant Choc. pudding
    4- 8-oz. cool Whip
    * oreo cookies crumbs (optional)
    * chocolate chips (optional)
    This really looks nice in a glass pyrex dish or a trifle bowl.
    Bake cake according to directions.
    and prepare pudding according to box.
    When cake is cooled.
    Layer as follows:
    half the cake – crumbled
    half the pudding ( 2 boxes prepared)
    16 oz. cool whip
    optional ingredients
    Repeat- using the rest of the cake, pudding, and the cool whip and the optional ingredients

    7-layer bar cookies…
    These are YUMMY!!!!
    1/2 c. butter or margarine
    1 c. graham cracker crumbs
    6 oz. chocolate chips
    6 oz. butterscotch chips
    1 1/3 c. flaked coconut
    1/2 c walnuts
    1 can sweetened condensed milk
    Melt butter in 13×9′ pan. Sprinkle crumbs evenly over butter. Layer with chocolate chips, butterscotch chips, coconut and walnuts. Pour milk over all. Bake @ 350′ for 30 minutes. Cool. Cut into bars.

    Pig Out Cake
    1 box of yellow cake mix
    1 small can (11oz) of mandarin oranges, undrained
    1/2 c. oil
    4- eggs
    Icing:
    12-16 oz Cool whip (I use 16 oz)
    1 lg. can crushed pineapple, undrained
    1 sm. pkg. instant vanilla pudding
    Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.
    Combine icing ingredients and spread on cooled cake.
    Cake does need to be refrigerated until ready to serve.
    * I sometimes add flaked coconut to the icing mixture.

    Try these two. The cupcakes are easy to make and the moouse (and the cupcakes too) taste delicious!!

    CHOC-HONEYCOMB MOOUSE

    Serves 4
    1/2 cup thickened cream
    250 g milk chocolate, chopped
    1/4 cup sugar
    2 teaspoons gelatine
    1/2 cup water
    2 x 35g chocolate coated honeycomb bars,chopped

    1. Heat cream gently in a small pan
    2. Add chocolate. Take off heat and stir until it melts
    3. Pour into mixing bowl. Put aside to cool.
    4. Mix sugar, gelatine and water in a small pan. Stir until sugar dissolves
    5. Turn up heat and boil. Take off heat and pour into mixing bowl
    6. Beat on medium speed 10 mins until thick and fluffy
    7. gently mix chocolate through. spoon moouse into four dishes.
    8. put in frige for 30 mins. Sprinkle honeycomb over and serve.

    CHOCOLATE CUPCAKES

    100 g butter
    2/3 cup caster sugar
    1 teaspoon vanilla essence
    2 eggs, lightly beaten
    1 cup self raising flour
    1/3 cup cocoa
    1/2 teaspoon bicarbonate of soda
    1/2 cup milk

    1. Preheat ovn to 180 degrees celius or 160 if fan forced.
    2. Lay out about 30 patty cases.
    3. Cream butter, sugar and vanilla until light and creamy. gradually add eggs and mix until combined.
    4. sift flour, cocoa and bicarbonate of soda. add to creamed mixture with milk. stir until just combined.
    5. spoon in patty cases. then cook for about 20 mintues or until skewer comes out clean. cool and then spread tops with chocolate butter cream

    Chocolate buter cream
    60g unsalted butter, softened
    1 1/4 cups icing sugar, sifted
    1 tablespoon cocoa, sifted
    1 tablespoon milk

    Combine all ingredients in a food processor and proces until smooth.

    Delicious!!
